My lunch today consisted of a salad with lamb, baby spinach leaves, walnuts, orange and a sweet orange and mustard Mayo.
The lamb was fried in organic extra virgin olive oil, with garlic salt, black pepper and dried rosemary for seasoning.
I made the Mayo by wisking together one Tbsp of Pams American style Mayo, one tspn whole grain mustard, half a tspn of Maile Dijon mustard, and a Tbsp of orange juice.
The total cost breakdown was: lamb $1.96, spinach $0.80, walnuts $0.30 and Mayo approx $0.70. The oranges were free from a friend. Total $3.74 - a bit pricey but my iron intake for today is well and truly covered :-)
